In today's episode: Pieter cleared out the Jazz Hall, Dave made soup, Jo taught us hot dog/bun calculus, and Jimmy showed up just in time to shame all of us in the burnout contest.

Yeah dude! but had to work next day, maybe next time if on a weekend .
Still made it back to open the shop this morning (but yeah holy fuck friday/saturday would be ideal for the employed folks)

Thank so much. I was surprised by how much y'all liked it.

Now I don't cook with measurements, but here is the rough recipe.

Equal amounts of onion (about one onion), carrots, celery, and bell pepper, diced, with some jalapenos (minced), sweated in a large pot with bacon grease and a pinch of salt.

Once those are soft toss in chopped zucchini and cook a couple minutes, until it picks up some sear, then fill till covered with chicken stock.

Once zucchini is easily smooshable, blend the soup until smooth with a stick blender, cook until it reduces a bit, and about a stick of butter, fill back to original level with milk, and then reduce that back down until it's to your desired thickness. I usually hit it with the stick blender a couple more times to make sure it's smooth.

Top with Cotija cheese (Parmesan would work, too), bacon, cilantro, and some paprika.
